Honey Mustard Baked Salmon with Rice

I made this meal last weekend and everyone loved it. The salmon was very tender and nicely flavored + it only took 15min to prepare. The marinade needs at least 30min, the longer the better!

What you need:

  • A knife and a chopping board
  • A small dish for the marinade
  • Cling Film to cover the marinade
  • An oven proof dish
  • A pot and a colander for the rice

Ingredients for 2 persons:

For the Salmon:

  • 2 salmon fillets
  • 2 garlic cloves
  • 3 tablespoons honey
  • 3 teaspoons Dijon mustard
  • Salt & pepper
  • Fresh Parsley

For the Rice:

  • A small glass of rice
  • Salt & Pepper
  • Fresh Parsley

Before you start:

  • Finely chop the 2 garlic cloves.
  • Prepare the marinade:
    • In a bowl, add: the honey, Dijon mustard, the minced garlic, salt & pepper. Whisk to combine.
    • Put the salmon in a small dish and pour the marinade on top.
    • Cover with cling film and leave in the fridge between 30 minutes and 2 hours.
  • Mince the parsley (not sure how to? Check this video)

Ready to go?

  • Prepare the salmon:
    • Preheat oven to 180 degrees C.
    • Put the salmon in an oven proof dish and add the marinade on top.
    • Bake for 12 minutes.
  • Prepare the rice:
    • Add the rice to the boiling water and follow cooking instructions (usually around 10 minutes).
  • On a plate, put the salmon, rice and sprinkle with parsley. You may add some salt and pepper on the rice.
