One Pot Grilled Chorizo & Vegetables

I’ve been experimenting with chorizo this year as it adds a nice flavor to every dish (see at the bottom of the page for some other recipes with Chorizo). And who doesn’t like grilled vegetables? They are healthy and so easy to prepare. Depending on the season or what you have on the fridge feel free to adjust the recipe.

One Pot Grilled Chorizo & Vegetables – The Beginner’s Cookbook Recipe

What you need:

  • A knife and a chopping board
  • A big oven dish

Ingredients for 2 persons:

  • 2 sweet peppers
  • 1 courgette
  • 1 cup cherry tomatoes
  • 100 grams green beans
  • 1 onion
  • 1 shallot
  • 1 teaspoon oregano
  • 1/2 cup red wine
  • 1/8 cup olive oil
  • 1/8 cup balsamic vinegar
  • 1 chorizo (100 grams)
  • * optional: fresh basil to decorate.
  • * optional: rice on the side if you’re hungry

Before you start – Prepare all your vegetables:

  • Halve the pepper, remove the seeds and slice into strips (not sure how to? Watch this video)
  • Slice the courgette
  • Trim the green beans if needed
  • Dice the onion
  • Mince the shallot

Ready to go?

  • Preheat the oven to 200 degrees C.
  • In your oven dish, toss:
    • the sliced chorizo
    • the sliced peppers
    • the sliced courgette
    • the cherry tomatoes
    • the diced onion & shallot
    • the oregano
  • Drizzle olive oil over the top and add salt & pepper
  • Put in the oven for 20 minutes
  • Prepare the sauce mixture; in a bowl whisk:
    • the wine
    • the olive oil
    • the balsamic vinegar
  • When the dish is cooked for 20 minutes, remove it from the oven, stir and pour over the sauce you just prepared.
  • Cook for another 20 minutes.
  • If you’re hungry like I was that day (!), you can also make some rice following the cooking instructions on the package.
