Quinoa Power Bowl

Lunch time and you want to prepare something healthy quickly? The Quinoa Power Bowl is probably what you’re after: ready in 20min, it’s very filling which means… no snack till dinner time!

What you need:

  • A knife and a chopping board
  • A pot for the quinoa (no colander needed!)
  • A small pot to boil the egg

Ingredients per person:

  • 80gr quinoa (1/2 cup)
  • 1/2 avocado
  • 1 egg
  • 1 handful of salad cress
  • 12 almonds (not salted)
  • 1/2 lemon
  • 1/2 teaspoon poppy seeds

Before you start:

  • Squeeze half a lemon
  • Slice half an avocado

Ready to go?

  • In a pot over medium heat, cook the quinoa in water till the water disappear (use twice more water than quinoa, so for 1 person that would be 1 cup for 1/2 cup of quinoa); once the water is boiling, lower the heat and it should take around 10min to be ready.
  • While the quinoa is cooking, put the egg in boiling water and leave for 8-10min once the water is boiling.
  • In a bowl, add:
    • quinoa
    • sliced hard egg
    • sliced half avocado
    • almonds
    • salad cress
    • the lemon juice
    • poppy seeds
  • Serve immediately and… BON APPÉTIT !

Feel free to customize it as you like: with a fried or poached egg instead of a hard egg, pumpkin seeds instead of almonds, with some cheese, roasted cauliflower etc.
