Marinated Lamb Souvlaki with Tzatziki

The marinated lamb is full of flavor. Combined with the cooling tzatziki and all the vegetables it won’t disappoint you during the summer months. I hope you’ll enjoy these healthy Greek-style skewers as much as I did!

What you need:

  • A knife and a chopping board
  • A big bowl for the lamb marinade
  • Cling film to cover the marinade & tzatziki while in the fridge
  • Baking paper to cook the meat in the oven
  • Bamboo or metal skews
  • A bowl for the tzatziki

Ingredients for 3-4 persons:

  • For the Lamb:
    • 500gr diced lamb
    • Fresh thyme sprigs
    • Oregano
    • 2 garlic cloves
    • 1 lemon
    • 25ml red wine
    • 50ml olive oil
    • Salt & pepper
  • For the Tzatziki:
    • 1/2 cucumber
    • 170gr Greek yogurt
    • 1 garlic cloves
    • 10 mint leaves
    • 1 tablespoon olive oil
  • Wrap:
    • 6-8 wraps or flatbreads
    • 2 handfuls iceberg salad
    • 250gr cherry tomatoes
    • 2 handfuls radishes

Before you start:

  • Mince the 3 garlic cloves
  • Make lemon zest with the lemon (not sure how? Check this guide)
  • Squeeze the lemon once the zest is done
  • Peel and cut the cucumber in small pieces

Ready to go?

  • Let’s prepare the lamb marinade:
    • In a mixing bowl, put:
      • The meat
      • The thyme & oregano
      • Lemon zest
      • The 2 garlic cloves
      • Red wine (25ml)
      • Olive Oil (25ml)
    • Cover with the cling film and leave it in the fridge for at least 2 hours (if you have time to prepare the marinade the day before, it’s even better!).
  • Let’s prepare the Tzatziki:
    • In a bowl, mix:
      • The cucumber
      • The yogurt
      • The garlic cloves
      • The minced mint
      • The tablespoon of olive oil
    • Cover with the cling film and leave it in the fridge till your meat is cooked and ready to be served.
  • Once the lamb marinade is ready:
    • Preheat the oven to 180 degrees C.
    • In the mixing bowl, add 25ml olive oil and the lemon juice. Toss gently.
    • Thread the meat onto the skewers and place on a baking sheet.
    • Add salt & pepper to taste
    • Cook for 6min in the oven, turn them half way through
  • While the lamb is cooking, prepare  the wraps:
    • Cut the cherry tomatoes in 2 or 4 depending on the size
    • Slice the radish
    • Cut the iceberg salad in small pieces
  • Serve immediately, and…
