Salmon Orange Glaze with Garlic Asparagus & Rice

A sweet and sour colorful dish! Lots of goodness and it tastes as good as it looks; perfect for summer.

Salmon Orange Glaze with Garlic Asparagus & Rice – The Beginner’s Cookbook Recipe

What you need:

  • A knife and a chopping board
  • A pan for the salmon
  • A pan for the asparagus
  • A pot and a colander for the rice

Ingredients for 2 persons:

  • For the Salmon:
    • 2 salmon fillets
    • 1 orange
    • 1 tablespoon sesame seeds
    • 1/3 cup Japanese Rice Vinegar
    • 2 tablespoons soy sauce
    • 1 tablespoon sugar
    • 1 teaspoon cornstarch
    • Olive oil
    • Salt & pepper
  • For the Garlic Asparagus:
    • 230gr asparagus
    • 2 garlic cloves
    • Half a lemon
    • Butter
    • Salt & pepper

Before you start:

  • Squeeze half of the orange and slice the other half.
  • Squeeze half of the lemon.
  • Mince the garlic cloves.
  • Cut the asparagus in chunks after removing the hard white part at the bottom (in 2 or 3 pieces depending on the size of the asparagus).

Ready to go?

  • Let’s prepare the salmon:
    • Season the salmon with some salt and pepper.
    • To prepare the sauce, add in a small pan on low heat:
      • 1/3 cup Japanese rice vinegar
      • 2 tablespoons soy sauce
      • 3 tablespoons orange juice
      • 1 tablespoon sugar
      • 1 teaspoon cornstarch
    • Cook for around 5 minutes till the sauce becomes thick and set aside when ready!
    • Add a bit of olive oil in another pan on medium-high heat and cook the salmon fillets till it browns (usually 5 minutes on each side).
  • While it’s cooking, prepare the rice: Add the rice in boiling water and follow package instructions (mine was 10 minutes).
  • Then it’s time to prepare the asparagus (it should take around 5 min):
    • Add a bit of butter in a pan on medium-high heat.
    • Add the asparagus, slightly coat them with butter and then sauté the asparagus till they get slightly browned (around 5 minutes).
    • Then add the minced garlic and toss.
    • Add salt, pepper and a dash of lemon juice.
  • Combine everything on a plate (adding the orange slice and the sesame seeds on top of your salmon) and…
  • BON APPÉTIT !
