Broccoli Carrot Apple Salad with Walnuts and Raisins

I love this salad! It’s ready in no time and the sweet flavours, the different textures and the sour sauce make the salad very tasty and original! It is not as sweet as you would expect, but enough to don’t crave dessert afterward.

What you need:

  • A knife and a chopping board
  • A gratter for the carrots
  • A big bowl for the salad
  • A small bowl for the dressing

Ingredients for 2 persons:

  • 1 broccoli head
  • 2 carrots
  • 1 red onion
  • 1 apple
  • 1/2 cup walnuts
  • 1/4 cup dried raisins
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 lemon juice
  • 1 teaspoon sugar
  • A pinch of salt & pepper

Before you start:

  • Cut the broccoli head into small pieces
  • Grate the carrots
  • Mince the onion
  • Cut the apple in small pieces
  • Squeeze half the lemon

Ready to go?

  • Toast the walnuts over medium high heat for 5 minutes max (toss them from time to time so they don’t burn). Chop them.
  • In a big bowl, add:
    • the small pieces of broccoli
    • the grated carrots
    • the chopped apple
    • the minced onion
    • the chopped walnuts
    • the dried raisins
  • Prepare the dressing and mix in a small bowl:
    • the mayonnaise
    • the sour cream
    • the lemon juice
    • the sugar, salt and pepper
  • Pour the dressing over your salad, mix well and serve.
