Smoked Salmon, Cucumber and Avocado Salad

Salad doesn’t have to be boring! This one has the perfect combination: crunchy cucumber, creamy avocado, fresh lime and of course tasty smoked salmon!

What you need:

  • A knife and a chopping board
  • A small bowl for the dressing
  • A large bowl for the salad

Ingredients for 2 persons:

  • 60gr rocket salad (arugula)
  • 2 avocados
  • 1 cucumber
  • 200gr smocked salmon
  • 2 tablespoons sesame seeds
  • 2 limes
  • 60ml cup of olive oil (1/4 cup)
  • Salt

Before you start:

  • In a small dry pan over medium heat toast the sesame seeds until golden (usually a few minutes) and set aside.
  • Slice the cucumber, the smoked salmon and the avocado.

Ready to go?

  • Let’s prepare the salad in a large bowl, add:
    • The salad
    • The sliced cucumber
    • The smoked salmon
    • The sliced avocado
    • Half of the roasted sesame seeds
  • Let’s make the dressing in a small bowl:
    • Squeeze the limes
    • Add the olive oil
    • Add half of the roasted sesame seeds
    • Salt to taste
    • Whisk!
