Stuffed Mushrooms and Baked Courgettes

These stuffed mushrooms are a great choice for a starter or can be served with some baked courgettes for a light lunch.

What you need:

  • A knife and a chopping board
  • A mini chopper (I have that one)
  • A pan for the mushrooms
  • An oven proof dish for the courgettes
  • A cheese grater if needed

Ingredients for 2 persons:

For the Stuffed Mushrooms:

  • 6 medium mushrooms
  • 3 slices of ham
  • 1 small courgette
  • 3 tablespoons creme fraiche
  • A handful parsley
  • 1 garlic clove
  • A bit of cheese (Cheddar or Emmental)
  • A bit of olive oil
  • Salt & pepper

For the Baked Courgettes:

  • 3 courgettes
  • 1 onion
  • Half a lemon
  • 1 teaspoon paprika
  • A bit of olive oil
  • Salt & Pepper

Before you Start:

For the Stuffed Mushrooms:

  • Remove the mushroom stems and keep them aside
  • Mince the parsley
  • Finely chop the courgette in small cubes
  • Grate the cheese if needed

For the Baked Courgettes:

  • Cut the 3 courgettes in half moon pieces
  • Roughly chop the onion
  • Squeeze half of a lemon

Ready to go?

  • Let’s prepare the baked courgettes first as they need 25 minutes in the oven
    • Preheat the oven to 180 degrees C
    • Sprinkle some olive oil in the oven dish and then throw the courgettes and onion. Mix until they are coated.
    • Add the lemon juice
    • Sprinkle with salt, pepper and paprika
    • Bake for about 30 minutes until the courgettes are tender.
  • Let’s prepare the stuffed mushrooms:
    • Add a bit of olive oil in the pan on medium heat and then cook the courgette’s small cubes till they brown (around 7 minutes)
    • In the mini chopper, put:
      • the mushroom stems
      • the ham
      • the garlic clove
      • the creme fraiche
      • the parsley (keep some to decorate the mushrooms once they are cooked)
      • Salt & Pepper
      • Once everything has been mixed & chopped, taste and adjust if needed.
      • Put the stuffing in a small bowl.
    • Add the courgette cubes to the stuffing
    • Fill the mushrooms with the stuffing and top up with a bit of grated cheese.
    • In the same pan, add a bit of olive oil and cook the stuffed mushrooms on medium heat for 20 minutes
  • Serve and… BON APPÉTIT !
